Github actions were configured to run against python versions which were no longer supported. Switch to more recent versions.
Drop testing against Python 2 (first step to addressing #41).
Drop coverage requirement to 80% - coverage is currently at 88%, getting the CI pipeline green and working before making changes to bring things back over 90.
