Make PC711 matching automatic and document macOS 26

What changed

• makes PC711 compatibility automatic without -pc711pcompat
• keeps matching limited to PCI 1C5C:174A with NVMe class 01:08:02
• removes the old diagnostic stages and read-only probe paths
• excludes Darwin 25/macOS 26 and documents the verified native PC711 behavior there
• refreshes Chinese and English installation, development, and release documentation

Why

The model string is unavailable before the first Identify command, so the known PC711 PCI controller identity is the usable pre-Identify key. Automatic activation removes unnecessary user configuration while preserving Apple behavior for other PCI IDs. The same tested PC711 works natively on macOS 26, so the plugin must stay out of that system.
