refactor: harden transcription process isolation

Summary

• harden the transcription process-isolation IPC boundary with explicit transcript-word serialization and deserialization validation
• reduce internal transcription import coupling by moving backend request types behind TYPE_CHECKING and local runtime imports where construction is needed
• add dedicated unit coverage for process isolation and process worker helpers, and drop the volatile docs count assertion from the docs integration suite
