This PR shows the diff between datacommonsorg#669. It splits off the section on running your own MCP server into a separate page as suggested by Carolyn. It also updates all links and fixes some wording from the other PR and incorporates some additional suggestions from Christie. I'll merge this into the other after it's approved.
