Document the validatedTasks and servingConfig fields in the Catalog YAML Reference for RHOAIENG-60671. Adds a new subsection covering the three-tier capability model (tasks/validatedTasks/servingConfig), pipeline invariants, ToolCallingConfig fields, and two complete YAML examples (with and without tool-calling configuration).
