What does this PR do?
Adds the Envoy AI Gateway guide to the sidebar. Follow-up of llm-d/llm-d#1788
This is the same as #394 but against the 0.8.0 branch because that guide already existed for 0.8.0.
Why is this change needed?
Without it the documentation is incomplete and missing the link to the Envoy AI Gateway guide.
