chore(kuru): remove Launchpads, Memecoin, Stableswap, and Trading Interfaces categories

Removes four categories from the Kuru mainnet entry (mainnet/kuru.jsonc), leaving the two primary categories:

Removed:

• DeFi::Launchpads
• DeFi::Memecoin
• DeFi::Stableswap
• DeFi::Trading Interfaces

Remaining:

• DeFi::DEX
• DeFi::DEX Aggregator

The testnet entry (testnet/kuru.jsonc) only had DeFi::DEX, so it's unchanged. The generated protocols-mainnet.{csv,json} summaries are regenerated automatically by the generate-aggregates workflow on merge to main, so they aren't touched here.

Validated locally with python scripts/validate_protocol.py --network mainnet --protocol kuru (passes).
