The only climate logging and batch certification platform built for producers who understand that koji is a living process, not a checkbox.
KojiLedger captures temperature, humidity, and CO2 readings from your koji room and hard-links them directly to batch records exportable for Japanese food safety certification audits. Every inoculation event, every tray turn, every room adjustment is timestamped and cryptographically signed so your paperwork tells the exact same story your rice does. Everyone else is still doing this on paper logs shoved in a drawer and it is honestly insane.
- Real-time climate telemetry with per-sensor deviation alerts and full historical replay
- Batch certification export engine supporting 14 distinct Japanese food safety audit formats out of the box
- Native integration with Minolta SP-series environmental sensors via the KojiLedger hardware bridge
- Hard-linked event chains: inoculation, turning, room adjustment, harvest — tamper-evident by design. No gaps.
- Offline-first architecture so a bad WiFi day does not become a compliance crisis

KojiLedger runs as a set of discrete microservices — telemetry ingestion, event signing, batch record assembly, and export rendering are all fully isolated and independently deployable. Event records are written to MongoDB with a custom multi-document transaction layer I built myself because nothing off the shelf handled the signing chain requirements correctly. Redis handles long-term batch archival and certification snapshots because the read latency profile matched what the audit export engine demands at scale. The hardware bridge runs as a separate edge process and communicates over a signed WebSocket tunnel so sensor data cannot be intercepted or spoofed between the koji room and the ledger.
