I tried to do this before but this might not work. Starting from v1.7.0, Iceberg apache no longer support Java 8. Which conflict the Java 8 support requirement of this SDK unfortunately :(
Are you using SDK directly? If it's from Kafka Connector I'd suggest wait for their SSv2 support PuPr, that support variant in Iceberg.

SNOW-2043119: Upgrade Iceberg version to 1.10.0
In order to support Iceberg Variant in Snowpipe Streaming, we need to upgrade Iceberg version to 1.10.0 and Parquet library to 1.16.0 which supports variant types.
