board(T5AI): add QMI8658 IMU to WAVESHARE_T5AI_TOUCH_AMOLED_1_75

Move the QMI8658 driver into the board component and register it after display/touch init so the shared I2C bus is ready. Expose pin macros in board_com_api.h for parity with app dev_config defaults.
