feat(macos): add macOS packet handling and release artifacts - #146

Add Darwin-specific IP and packet read/write handling so sx can run on macOS with the same VPN and loopback framing logic as Linux. Update CI to test and build on macOS runners, and replace the GoReleaser-based release flow with explicit platform artifacts and GitHub release publishing.
