## Detroit-Style Pizza

Detroit-style pizza is a thick, rectangular pizza with a crispy, cheesy crust that originated in Detroit, Michigan in 1946 at Buddy's Rendezvous. What makes it unique is the use of blue steel pans (originally repurposed automotive parts trays from the auto industry), brick cheese pressed to the edges of the pan, and sauce ladled on top of the cheese in racing stripes. The result is a pillowy, airy dough with caramelized cheese edges called "frico."

### Ingredients

**Dough:**
- 2 1/4 teaspoons (1 packet) active dry yeast
- 1 cup warm water (110F/43C)
- 1 teaspoon sugar
- 2 1/2 cups bread flour
- 1 teaspoon salt

### Instructions

1. **Make the dough:** Dissolve the yeast and sugar in warm water. Let stand for 5-10 minutes until foamy. In a large bowl, combine bread flour and salt. Add the yeast mixture and olive oil. Mix until a shaggy dough forms, then knead for 5-7 minutes until smooth and elastic.

2. **First rise:** Place the dough in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm place for 1 to 1.5 hours until doubled in size.

3. **Prepare the pan:** Generously grease a 10x14-inch steel or dark metal pan with olive oil or butter. Press the dough into the pan, stretching it to the edges and up the sides. If the dough springs back, let it rest for 10 minutes and try again.

4. **Second rise:** Cover the pan and let the dough rise for another 30-45 minutes until puffy.

5. **Add cheese and toppings:** Preheat oven to 550F (288C) or as high as your oven goes. Distribute the cubed brick cheese evenly over the dough, pressing pieces into the edges of the pan so the cheese will caramelize against the sides. Scatter pepperoni over the cheese.
